Silky, savoury and utterly impossible to not hanker after a second once you've finished one.
50ml Olive oil washed In Full Bloom Gin
10ml Dry White Vermouth
A flake or two of sea salt
Garnish: good olive oil & a coriander leaf
To wash the gin: Infuse 350ml gin with 75ml of really good extra virgin olive for 12 hours, freeze for 12 hours, then strain.
Stir gin, vermouth and salt with ice until chilled, strain into a frozen martini glass, garnish and go to Martini Heaven.
