This is a bittersweet (and, in our opinion, superior) take on a classic gimlet. We’ve swapped the sharpness of lime for fresh pink grapefruit, giving it a softer, more aromatic bitterness that feels made for aperitivo hour. Ridiculously simple to throw together, but the sort of drink that somehow disappears far too quickly once the good company arrives.

60ml freshly squeezed or good quality red grapefruit juice
15ml simple syrup
garnish: a half moon of grapefruit and a sprig of rosemary.
Add the gin, fresh grapefruit juice, simple syrup, and into a cocktail shaker.
Fill the shaker generously with ice and shake vigorously for 20 to 30 seconds until the outside of the tin is ice-cold to the touch.
Strain into a chilled glass. Garnish with the grapefruit and sprig of rosemary, and sip to your heart's content.

Make ahead for the crowd- serves 8. The sort of thing worth keeping tucked in the fridge door all summer long.
480ml Loveday Kissing Gate Gin
480ml fresh pink or red grapefruit juice
120ml simple syrup
120ml water (this is to replace the dilution that happens when you prepare a cocktail in a shaker)
Add everything to a large bottle or jug and give it a good shake or stir. Pop into the fridge until properly cold, pour into glasses that have been chilling in the freezer for a couple of minutes. Garnish and enjoy.
