Batch make for a summer get-together (serves 4)
150ml Loveday Spiced rum
100ml coconut water
70ml strained pineapple juice
40ml strained fresh lime juice
30ml allspice dram
30ml simple syrup
100ml whole milk to clarify
Mix all ingredients except milk together, then add in the milk. Let it sit for 30 minutes until the mixture looks visibly curdled (trust us on this!) Strain through a cheesecloth, bottle and keep in the fridge. To serve, pour over a large ice cube and garnish with pineapple leaves, a slice of dehydrated pineapple and optional paper umbrella, because why not!
