When we started making spirits, we actually set out to make rum. We loved it — the warmth, the complexity, the way it brought people together. But rum needs time. It has to rest in barrels for years to develop its depth, and in lockdown, we didn’t have the luxury of waiting. So while the rum quietly aged, we turned our attention to something that felt more immediate — and just as exciting: gin.
We chose gin because it felt like the most open-armed of spirits. Unlike other spirits, like whisky, which comes with strict rules and long timelines, gin offered freedom. As long as it’s led by juniper, anything goes. That made it the perfect playground for our cheffing instincts. We could take the botanicals we already loved cooking with — herbs, flowers, citrus, spice — and reimagine them as something to sip. The same instincts, just different equipment.
That openness — that space to experiment — gave us a creative outlet when the world felt heavy. We’d leave little bottles on each other’s doorsteps, taste over Zoom, experiment endlessly, and Google furiously. Chloe was pregnant at the time, which made tasting extra tricky. But somehow, we cracked on. We applied for licences at our kitchen tables. We distilled our first recipes in a tiny 1-litre still. They tasted... bad. Really bad. But we kept going.
Our first real product was Falmouth Dry — a bright, coastal gin inspired by our hometown and everything it represented during lockdown: grounding, comfort, and a sense of place. It took 63 recipe iterations to get it just right. We wanted it to feel like a deep breath of sea air. Something you could share with your favourite people and feel lifted by.
We were doing it all ourselves, in between restrictions, in the middle of a pandemic, with no rulebook. But we believed completely in what we were making. When we opened pre-orders for Batch No. 1, the response floored us. We were in tears. It sold out in days, thanks to the community we’d been quietly building online.
From day one, we’ve set out to do things differently. No “mother’s ruin” clichés. No cloying flavours or novelty labels. Just fresh, distilled-from-scratch spirits made with thought and joy. Every Loveday gin is designed to bring people together — to spark connection, laughter, and shared moments.
And we’re still doing it our way: sustainable ingredients, compostable packaging, and recipes that start with a feeling, not a trend.
Because gin should make you feel something — not just taste good. And we hope ours does both.
