When we first distilled cherry blossom last spring, we had one of those ah-ha moments where you open the bottle of just-distilled new botanical, and just know you’ve landed on something good. So when we came to making the next in our sell-out series of limited edition releases- we knew where to start!
All frangipanne and cherry stone, with a clotted cream warmth. Silky, floral and delicate, but with a fresh note that made us think of green walnuts.
Coming back to it this year, we were half expecting it not to live up to the memory but oh boy it did!
All our gins start with a backbone of dried botanicals, then we layer on fresh ingredients- with the tinctures, or concentrates we distil seperately. But every time we did that here, it felt a bit heavy, a bit cluttered, like the cherry blossom was getting lost.
So we changed tack and developed the recipe the other way round: we started with armfuls of fresh cherry blossom instead, distilled to capture that fleeting, just-opened softness, then gently 'seasoned' with a couple of other ingredients (including juniper) to hold it all together.
Another first for us too: it's sweetened ever so slightly- we found it made the blossom sing, making it rounded, but no where near cloying. Technically this makes it an Old Tom style gin, but almost certainly not as you've come across before!
The result is properly true to this beautiful ingredient. It is brimming with blossoms and, no surprise, tastes like it too!
