Why we built our first gin around fresh rock samphire

For our very first gin we wanted a recipe that referenced and celebrated our beautiful hometown of Falmouth. This seemed like a good place to start. For the headline botanical we wanted something fresh, maybe an ingredient that we got to know while cheffing.
Honestly, the smell of this succulent, antler-looking minerall-y, green, anise-y parsley-ey - herb is Cornwall's coast in a nutshell to us. It grows like anything all over Falmouths coastline and is really, really delicious. Both of us have cooked with armfulls of it over the years, in various kitchens, so it felt familiar too, and when embarking on a huge great new project (creating a distillery and a brand new gin?), let me tell you, familiar felt like a goooood starting point.
Daisy started pairing fresh samphire with fennel and lemon peel when she was building our first gin recipe, and we knew we were on to something. 63 recipes later, and Falmouth Dry Gin was ready in April 2021, and we happily haven't really stopped since! 🌿🍸☀️
