Raspberry Rose Fizz

Summery, fresh, delightfully pink

50ml gin, 25ml lemon juice,

35ml raspberry syrup (150g raspberries, 150ml water, 150g golden caster sugar and a dash of rosewater. bubble for 10 minutes, blend with a stick blender then strain and cool)

1 egg white

Soda to top

Dry shake the first three ingredients for 15 secs, add 3-4 ice cubes and shake, then strain into a tumbler. Top with the soda and garnish with rose petals
