Peach Cooler

The perfect long, Summery sharer - serves 4 -6

200ml Glas House Gin

200ml Sweet white vermouth

2 tbsp demerara

4 ripe peaches sliced

15 lemon balm leaves, picked off the stalks

Soda to serve

In a large jug mix the peaches with the demerara and leave for 15 minutes to macerate. Add the rest of the ingredients, apart from the soda, and chill in the fridge for 4 hours to a day until you’re ready to enjoy.

To serve, get your favourite people together, pour into a glass over ice and top with soda.
