Rum & Fig Highball

Simple and just delicious

35 ml Loveday Organic Spiced Rum

20ml Sipello Aperitif,

60ml Fig & honey cordial

80ml Soda water

To make the cordial- gently heat 6 chopped fresh figs with 5 tablespoons of honey and 200ml water. Bring to a boil and turn off the heat to cool. Strain and keep in the fridge until you’re ready to use it.

To make the cocktail add the first three ingredients to a shaker with ice, shake vigorously and strain into tall glass over more ice. Top with soda, stir, and garnish with a couple of slices of fig.
